Panzanella is a brilliant in its simplicity Tuscan salad made from sun-ripened tomatoes, stale bread, onions and vinegar. It’s a great way to use stale bread, which is cut into pieces, drizzled with olive oil (preferably flavoured with chilli to intensify the flavour) and toasted in the oven. The prepared croutons are then mixed with sliced, juicy, ripe tomatoes and sweet cocktail tomatoes. Add red onion rings, basil leaves, balsamic vinegar sauce (or wine) and a sprinkling of grated Parmesan… The croutons soak up the delicious juices from the lettuce and tomatoes and the whole thing tastes delicious!
Panzanella can be adapted as you like and supplemented with your favourite ingredients, although I have to admit that for me the salad in this classic version is just perfect. Panzanella – Tuscan Bread Salad With Tomatoes (original recipe with stale bread)
Ingredients
3 large tomatoes (ripe, e.g. raspberry tomatoes)
3 handfuls of cocktail tomatoes in various colors
1 red onion
a small bunch of fresh basil
several slices of stale bread (or ciabatta)
olive oil (preferably chili-flavored)
1 large or 2 small cloves of garlic
olive oil + balsamic vinegar (or wine)
salt and freshly ground pepper
a bit of grated Parmesan
Directions
- Preheat the oven to 200 degrees Celsius. Cut the bread into 2 cm pieces, drizzle with flavored olive oil, spread evenly on a baking sheet, and bake for about 10 minutes. They should become golden brown and crispy croutons.
- Wash and dry the tomatoes, cut them into larger pieces, halve the cocktail tomatoes, julienne the red onion, put the vegetables in a bowl, and mix. Add finely chopped garlic and drizzle the mixture with oil mixed with balsamic vinegar (quantity to taste).

- Add basil leaves, season with salt and pepper, add croutons, then mix everything thoroughly with your hands, lightly pressing the tomatoes and bread, and sprinkle with Parmesan.
