Lately, I’ve been craving fish so much that I whipped up a quick, delicious dinner… and I realized I haven’t been buying enough fish lately, even though I love fish, and my kids are crazy about it too. We used to have a lot of fish at our house. So, I prepared breaded fish (in two ways, but more on that in a moment) and baked it with some mayonnaise, cheese, and roasted onions… I also made the best tzatziki with pickles and served it with young potatoes and dill. I probably haven’t taken photos so quickly in a long time… I was so eager for this dinner that it turned out to be one of the shortest photo sessions I’ve ever had 😂 Of course, my portion had cooled down a bit, but hey, “a blogger always eats cold” 😉 Anyway, the fish was delicious, and the creamy cheese layer, a bit of mayonnaise, and the roasted onions were the perfect topping.
I prepared the fish in two ways because I couldn’t decide which version would be better. My son wanted me to fry the fish in pancake batter, so I did half of the fish that way, and the other half, I breaded in traditional breadcrumbs – flour, egg, and breadcrumbs. Then I placed the fish fillets on a baking sheet, brushed each with a teaspoon of mayonnaise, and sprinkled them with grated cheese and roasted onions. You can use any yellow cheese you like; I happened to have grated mozzarella cheese on hand, so I used it for this recipe. It’s broiled for about 4-5 minutes and it’s done.
For me, the breaded version with flour and breadcrumbs won, my son liked the pancake batter version better. My husband and daughter were also on Team Crispy Breading #1. Anyway, the choice is up to you. You can try both versions.
The fish tastes truly delicious with tzatziki seasoned with garlic and pickles. The roasted onions did wonders here, the flavor is fantastic! Of course, I drizzled some lemon juice over the fish as well. I probably don’t need to recommend the young potatoes with dill to anyone in particular. So, I invite you to cook together. Ingredients
800g fish fillets (e.g., haddock, cod, hake, or your favorite fish) – I used frozen

3/4 teaspoon of baking powder

Several teaspoons of mayonnaise
A pinch of paprika for sprinkling
Oil for frying
Lemon juice for drizzling over the fish
Potatoes (I used young potatoes)

—INGREDIENTS FOR TZATZIKI:
300g cream cheese
2-3 pickles
2 garlic cloves
Pepper
Directions
- Drain the thawed fish well on a paper towel and season with salt and pepper.
- Choose which breading you prefer:
- PREPARE TZATZIKI:
- GARNISH:
- Preheat the oven to 200°C (392°F).
Breadcrumbs I: Coat the fillets in flour, then in beaten egg, and finally in breadcrumbs. Fry the fish in hot oil until golden brown on both sides.
OR Ingredients for Breading II, the Pancake Batter: In a larger bowl, mix all the ingredients for the batter (e.g., with a whisk or spoon). Dip the fish fillets into the batter, shake off excess batter, and fry the fish in hot oil until golden brown on both sides.
Mix the cheese with finely grated pickles (with skin, drained), grated garlic, and pepper.
Boil peeled or thinly peeled new potatoes until tender in salted water. Drain.
Place the fried fish on a baking sheet lined with parchment paper. Spread a teaspoon of mayonnaise on each fillet, then sprinkle with grated cheese and a pinch of paprika, and top with fried onions. Bake the fish for about 4-5 minutes until the cheese has melted. Transfer the fish to a plate, drizzle with lemon juice, top with tzatziki, and serve with potatoes. Garnish with dill.
