Mexican-style fried rice with meat, lightly seasoned, featuring colorful bell peppers, corn, beans, and tomatoes, along with onions and plenty of garlic. It’s served with avocado, lime juice, and fresh cilantro or, when unavailable, simply parsley. This quick dish is prepared in a large skillet (preferably a deep one), with the rice cooked separately and then combined with the meat and vegetables for cooking together. Plus, you won’t have to do much dishwashing after such a lunch or dinner! The entire dish still tastes great when reheated the next day, making it perfect for workday lunches. Mexican-style minced meat fried with rice
Ingredients
4 tablespoons of oil
1 medium-sized onion
3 cloves of garlic
2 bell peppers (e.g., red and yellow)
500 g of minced meat (e.g., ham or shoulder)
1 can of corn
1 can of red beans
1 can of diced tomatoes
2.5 teaspoons of sweet paprika
1 teaspoon of dried oregano
0.5 teaspoon of cumin (optional)
Chili flakes or hot ground pepper (amount to taste)
Salt and pepper
1 teaspoon of butter
1 teaspoon of sugar (optional, to taste)

—ADDITIONALLY:
2 bags of rice (2 x 100 g)
2 ripe avocados
1 lime
Fresh cilantro (or parsley)
Directions
- Cook the rice in salted water according to the package instructions, drain, place it on a plate, and let it cool.
- Heat the oil in a pan, sauté the onion, add the garlic pressed through a press and briefly fry everything, making sure the garlic doesn’t burn. Add the diced bell peppers and sauté for a few minutes until the bell peppers are browned but still crisp.
- Mix the ground meat with 1.5 teaspoons of sweet paprika, salt, pepper, and cumin (optional). Push the vegetables to the side and add the meat to the pan, crush it with a wooden spatula and fry until crispy, then mix it with the remaining vegetables in the pan and cook for another 5 minutes.
- Now add the drained corn, beans, and tomatoes, and add the spices again: the remaining 1 teaspoon of sweet paprika, oregano, chili flakes, or hot paprika to taste, as well as salt and pepper. Finally, mix everything well, add 1 teaspoon of butter and sugar, and cook for another 7 – 8 minutes until the flavors have melded.
- Add the cooked rice to the finished dish, fry and mix for a few minutes. Divide the dish onto plates, sprinkle with avocado cubes, drizzle with lime juice, and garnish with cilantro (or parsley).
